Adventures In Cheesy Family Traditions

Both my brothers married very well.  By that I mean, not only do they have lovely and talented wives, but in both cases, my brothers have become better men because of their wives.  Okay, there might be a few other factors, but mostly, I credit the wives.  My youngest brother still lives in California with my favorite sister-in-law, but they do come up to visit on the holidays, and she brings with her a delightful and easy dish, Cheesy Potatoes.

Apparently, this recipe started with her grandmother (the origins prior to that are murky) and the whole family loves it.  It’s traditionally served for their extended family holiday dinners (Easter, July 4th, Thanksgiving, and Christmas) and is widely requested anytime they are bringing a dish to a social event.

Our family has grown accustomed to having Cheesy Potatoes with our holiday meals and we are just not prepared to do without.  I guess we adopted that tradition when we invited my sister-in-law into the family.  So we get her and Cheesy Potatoes.  Win win!

The dish is quite easy…in a large mixing bowl, stir together uncooked hash browns, a can of cream of potato soup, a can of cream of celery soup, a pint of sour cream, and 1 cup of shredded cheddar cheese.  Spread it into a lightly greased 9x13” baking dish, and sprinkle another cup of shredded cheddar cheese over the top.  Cover with foil and bake for 45 minutes.  Then uncover it and bake another 15 minutes.  Easy peasy.  My sister-in-law and I won’t mind at all if you add this to your family traditions.  Enjoy!


Cheesy Potatoes

INGREDIENTS

32 oz bag of frozen hash browns, thawed

1 can condensed cream of potato soup*

1 can condensed cream of celery soup

16 oz sour cream

2 cups grated cheddar cheese, divided

DIRECTIONS

Preheat oven to 350°.

Mix all ingredients (except for 1 cup of the shredded cheese) and spread into a lightly greased 9x13” baking dish. Sprinkle the other cup of shredded cheese over the top. Cover tightly with foil. Bake for 45 minutes covered, and then another 15 minuted uncovered.

*if you cannot find cream of potato soup, cream of chicken soup can be substituted
